Muddled Cocktails: Focus (on)

If you haven't played with Baijiu yet you are missing out! This funky, earthy, weird fruity, unique potion from China is the most consumed liquor in the world, but finding it stateside can be an adventure. We are lucky to have a Baijiu distillery right down way in Portland @vinndistillery, which makes this wild liquor. We mixed it up with some muddled Golden Dragon fruit in this cocktail."Focus (on)":2oz - @vinndistillery Baijiu1oz - Lime Juice1 - Sugar CubeOne large spoonful of Dragon Fruit1 Egg WhiteIceAngosturaAdd Dragon Fruit, sugar cube, and Baijiu to the tin. Muddled Cocktails: Bits of Regalia

This one is an interesting pairing of Celery and Watermelon with smokey Mezcal undertones. Muddled Cocktails: Snakes in Hieroglyphs

I whipped up a batch of homemade Tepache a week ago so it would be ready to enjoy today. Paired with some beautiful @espolontequila , this drink is made for warm summer days and reflecting on the massive cultural impact Mexico has had on the world.A quick note on Tepache, it is a fantastic drink that is easy to make at home. It is very common to find this sold in stalls all over Mexico. It's refreshing, low ABV, and supports a zero-waste approach to food by utilizing the rinds of the pineapple. Muddled Cocktails: A Pretty Capable Sort

Guaro is a beautiful liquor that I love to play with. While sometimes hard to find in the states it is a staple in most of Central America. It's delicate funky sugar cane base is great as an alternative to white rum or Pisco classics. Usually bottled at 60 Proof, it makes a good mid-abv cocktail option. @guarocaciqueis a constant on our home bar."A pretty capable sort":5-6 Fresh Kumquats3oz Guaro @guarocaciqueIceEgg white3 sugar cubesSplash or waterDash or Orange Blossom Water @cortasfoodCut the Kumquats in half and toss in the tin with sugar cubes, splash of water, and the Guaro. #MuddleFiercely Once fully muddled, add the egg white and give it a hard shake.
